One of the city's most precious treasures, The Pompadour was opened in 1925, inspired by the official chief mistress of Louis XV.

    Disappointing start to the evening with no-one at the restaurant podium to greet us , also the cocktail lounge area that we had had previously used on our last visit to the restaurant had been used to host a table for a private dinner , so the opportunity for pre-dinner drinks was not provided and not communicated to us prior to arriving.
    After selecting a bottle of wine from the wine list I was informed it was not available , I was offered a reasonable alternative which was fine , but again prior information when given the wine list would have enabled me to choose without wasting my time looking for a wine that was not available.

    Have dined here twice now and have eaten very well on both occasions.

    For the standard of of cooking (fine dining/Michelin level) and quality of ingredients I think that the set priced, 3 course a la carte menu represents excellent value. The menu focuses on quality, seasonal Scottish/British ingredients. I have enjoyed gorgeous scallops, halibut, roe deer, sirloin and so on. Portion sizing is perfect - not too much, not too little. There are delicious little canapes to start and tasty sweet morsels at the end of the meal too.

    The only adjustment I would like to see is a bit more choice at the affordable end of the wine list but we did enjoy a reasonably priced bottle of Gruner Veltiner. Wine prices tend to reflect the 5* hotel setting but they have a lovely sommelier who is happy to help.

    Service is excellent and I was warmly welcomed back on 2nd visit making me feel valued and appreciated. We expect to return regularly now.

    The room was beautiful, and the food was delicious and beautifully presented. The server waiting on this table next to us explained the dishes. Ours did not. Service was good but became slow and inattentive toward the end.

    Menu disappointing - no game. Staff seemed keener on chatting to guests they knew. Before we got to the table we were harangued about allergies. Let us sit down first please.

    We visited this restaurant during a week of trying different fine dining restaurants in Edinburgh (including the Kitchin, its sister restaurants The Scrag & Scally and Castle Terrace and Martin Wishart). By the end of the week, The Pompador still stood out to us as an absolutely incredible experience and far, far superior to our evenings at the Kitchin restaurants.

    The restaurant was warm, welcoming and spacious. The waiting staff and sommelier were fantastic. They explained the dishes in great detail; were attentive without being overbearing; and were clearly very experienced in their roles.

    We choose from the 3 course a la carte menu and were impressed by every course. The presentation was consistently draw-dropping; the passion, time and care put into every dish was obvious. This was particularly true of the canapés and amuse bouche, which really showed off the chef’s technical ability.

    The combinations of flavours were unusual but all worked perfectly. A particular highlight was the beef, which was cooked to perfection, uniform throughout, succulent, bursting with flavour and melt in the mouth soft. The portion sizes were perfect, meaning we ended the meal satisfied but not uncomfortable and were able to appreciate every course.

    Very pleasant greeting and surroundings with The Pompadour situated in the most stunning of rooms.

    Waiting staff were super attentive and the Sunday lunch offered 3 options for starter, main & dessert. Every dish my wife and I received was beautifully cooked and well presented. The only negative was I’d have liked a Yorkshire pudding with my beef - well it was Sunday lunch! Saying that - it was a beautiful piece of beef and my wife’s trout was flakey and tasty.

    The only negative to us - maybe not to others - was that it took just over 2 hours for a 3 course meal. It just seemed a little long and drawn out but we will know for the next time - and yes we would return no problem.
